Apple Store iPhone5S Fingerprint Sensor

Why are the Apple Store iPhone5S's not finger sense protected? I went to a Apple Store and used one of their 5S 's on display and was able to use it without it denying me due to the finger print sensor. Do the Apple Store employee's program the phones to not read their prints?
