Have a quick question about and updates to iOS programs please

Ok.....I am a newbie so please bare with me. When I hook up my iphone to itunes there is a section that says Verison and check for updates.....my phone is jailbroken and currently on IOS 5.1.1 I want to KEEP it there.....if I hook up my phone to itunes and say ios 6.0 is droped.....will it...
