AT&T Conclusively disabling cellphones at sea

Greetings, I've been thinking about how to disable our cell phones while we're on an upcoming ocean cruise. What are the ramifications of pulling the SIM cards for four days? The reason is that everyone will still want to take pix and vids with their phones, listen to downloaded music, etc...
