complete backup iOS 5.1

As posted elsewhere here, I am not an iPhone person. I root my android phones, fool around with them, make complete nandroid backups, EVERYTHING restores. I backup wife's iPhone using iTunes. When I restore, some of the apps are not restored. The "desktop" folders are not restored. The WIFI...
