The culprit of this market increase is us, the consumers, who have created a huge demand. The fact that everything gets a bacon wrap these days is probably partly to blame. There's also the rise of BLTs during the summer months when tomatoes are at their best.
The fluctuation of bacon prices and availability is something we're all getting used to -- the great Aporkalypse of 2012 made sure of that. But just because we're accustomed to our favorite breakfast meat's highs and lows doesn't mean we have to lay down and take it. No, it's time to be proactive bacon lovers and conserve a bacon stash before the market makes it unaffordable again. It's time to freeze your bacon. Not only is freezing bacon totally possible, it's also something you should do with regularity to take advantage of those two-for-one deals at the supermarket. And it'll guarantee that you always have bacon on hand when you need it. Freezing bacon isn't as easy as tossing a package into the freezer; it requires a little bit of prep.
